Measurement turns a recipe into a reproducible system. Jigger volume, scale accuracy, thermometer calibration, proof and dilution all need units and tolerances. The bar should know the difference between alcohol by volume, proof, temperature and water addition instead of using strength as a guess.

When and why to use the method
- Choose the proper instrument for volume, weight, temperature and alcohol measurement.
- Set calibration checks for jiggers, scales and thermometers at defined intervals.
- Calculate final alcohol and dilution from the actual recipe, including batch water and service ice.
- Use hydrometers only within their limitations; sugar and dissolved ingredients distort alcohol readings.
- Write tolerances that are tight enough for quality but realistic for live service.
