Wine opening and service

Wine service protects pressure, cork, temperature, oxygen and accurate pours. Still wine, sparkling wine, old corks, decanting, preservation and flights require different tools and sequences; speed comes from preparation, not from treating every bottle the same.

Wine opening and service: working standard

The Wine opening and service method is complete only when a worker can choose it for the right reason, execute the sequence, read the result and correct a failure under service pressure.

When and why to use the method

  • Choose opener and preservation method by closure, bottle condition and expected turnover.
  • Chill sparkling wine fully and control the cork and cage throughout opening.
  • Decant for sediment or controlled aeration, not as automatic ceremony.
  • Set by-the-glass pour volume and flight portions with measured yield.
  • Date and preserve open bottles according to style, equipment and tested freshness.

Execution sequence and service cues

  1. Present or verify the bottle, inspect temperature and remove foil cleanly.
  2. For still wine, center the worm and extract without piercing through or breaking the cork.
  3. For sparkling wine, keep a thumb on the cork, loosen the cage and turn the bottle slowly away from people.
  4. Wipe the lip, inspect cork and wine condition, then pour the approved amount.
  5. Apply preservation, mark the open date and return the bottle to correct storage.

Observable quality controls

Closure

Cork or cap is removed without debris or injury.

Temperature

Wine is in a range that supports style and safe opening.

Pour

Glass and flight volume match the written yield.

Condition

Oxidation, cork taint, seepage or sediment is identified before guest service.

Technique failure diagnosis

Flying cork

Sparkling wine is opened warm or without continuous control.

Cork tunneling

The worm is off-center and tears an older cork.

Ceremonial decanting

Wine is exposed to oxygen without a reason or service plan.

Preservation without dating

Equipment is used but no one knows how long the bottle has been open.

Training and sign-off

Open a screwcap, standard cork, fragile old cork and sparkling bottle; then prepare a measured three-wine flight. The trainee must select the tool, control pressure and sediment, identify a fault and complete preservation and dating.
