How this family works

Beer- and wine-based mixed drinks require product-specific handling. Carbonation, package size, oxidation, serving temperature, fruit preparation, and batch holding can change the drink more than a small spirit adjustment.

Controls for a working room

  • Keep package and draft products at approved service temperature.
  • Build gently to protect carbonation.
  • Date and refrigerate opened wine-based ingredients according to policy.
  • For sangria, document fruit, batch yield, holding time, and discard rule.
Use the specifications as starting points. Confirm brands, product labels, glassware, ice, garnish, cost, allergens, alcohol strength, and responsible-service procedure before adopting a house version.
