Carbonation and frozen programs

Carbonated and frozen programs are temperature-and-solids systems. Carbonation depends on cold liquid, pressure and dissolved gas; frozen texture depends on sugar, alcohol, water and machine temperature. Both fail when a recipe is treated as a normal cocktail poured into special equipment.

The Carbonation and frozen programs method is complete only when a worker can choose it for the right reason, execute the sequence, read the result and correct a failure under service pressure.

When and why to use the method

  • Measure sugar, alcohol and dissolved solids before approving a frozen-machine recipe.
  • Keep carbonation liquid cold before gas contact and define target pressure for the equipment and temperature.
  • Separate ingredients that foam, settle or clog from those suitable for keg or frozen circulation.
  • Set batch and machine capacity from peak service without exceeding safe fill or minimum operating volume.
  • Write shutdown, cleaning and recovery procedures before launching the program.

Execution sequence and service cues

  1. Prepare the base to the written formula and verify temperature, Brix or other house measure.
  2. Strain particles to the equipment requirement and load only a clean, inspected vessel.
  3. For carbonation, apply pressure through the approved regulator and allow the defined absorption time.
  4. For frozen service, allow the machine to reach texture before judging the formula.
  5. Record pressure, temperature, texture and yield at opening and after the busiest service period.

Temperature

Liquid and equipment stay in the range required for gas absorption or freezing.

Solids

Sugar and alcohol support the intended texture without freeze-up or slush collapse.

Pressure or viscosity

The system produces a stable pour rather than foam, sputter or watery melt.

Cleanability

No pulp, spice or residue remains in inaccessible lines or components.

Pressure is increased to compensate for warm liquid, creating unstable service.

Frozen guesswork

Sugar or alcohol is adjusted by taste without measuring the system.

Particle clog

Unstrained fruit or spice enters small passages.

Product is left in the machine or line beyond the approved hold and cleaning window.

Training and sign-off

Prepare one carbonated test batch and one frozen test batch. The trainee must record temperature and formula, identify the adjustment for flat carbonation and soft frozen texture, then complete the full cleaning and restart sequence.
