Temperature and testing tools

Infrared and probe thermometers answer different questions. Infrared reads surface temperature and cannot prove the center of a liquid or food is cold; a probe reads internal temperature but requires insertion, cleaning and response time. The bar must use each within its limits.

Selection, capacity and installation decisions

  • Choose temperature range, response time, accuracy and probe style for the actual products tested.
  • Use infrared only for surface screening and account for shiny metal, glass and distance-to-spot limitations.
  • Use a sanitized probe for internal liquid or food temperature when the measurement requires it.
  • Create calibration checks using ice-point or another approved reference.
  • Store the instrument where the sensor stays protected and batteries remain available.

Commissioning, use and maintenance standard

  1. Inspect and calibrate before the shift or production task.
  2. Clean and sanitize probe stems before and after each insertion.
  3. Allow the reading to stabilize and record location, product and time.
  4. When infrared screening shows a concern, confirm with the correct internal method.
  5. Remove instruments that drift, have damaged probes or cannot be cleaned.

Training and sign-off

Measure ice water, a bottle surface, liquid center and refrigerated garnish using both instruments. The trainee must explain the differing readings, calibrate the probe and choose the defensible measurement for each control point.
