Mechanism
Brisket contains two muscles with different geometry and connective tissue. Slow pit cooking gives collagen time to convert while smoke deposits on a drying surface. Evaporative cooling contributes to the stall. Wrapping reduces evaporation and speeds heat transfer but softens bark, so bark condition—not a clock—is the decision trigger.

- Trim hard fat and thin ragged edges; record raw and trimmed weight.
- Apply weighed seasoning evenly.
- Stabilize clean-burning pit at 250–275°F before loading.
- Cook unwrapped until bark is deep mahogany and set.
- Wrap, if used, when bark and cook trajectory justify it—often around 165–180°F.
- Begin careful probe checks as the brisket enters the high 190s. Pull when serving zones show low resistance.
- Rest, then controlled hot hold. Slice across grain close to service.
Sensory standard
Bark is dry-set, dark mahogany and aromatic without bitterness. Flat bends without crumbling and separates with a gentle bite. Point is richer and well-rendered without greasy pockets.
