Mechanism
Chicken-fried steak works when cutlet thickness, breading hydration and fryer recovery align. Equal thickness lets the beef finish before the crust scorches. A rested double dredge creates rough hydrated ridges that bond to the meat. The oil must recover quickly enough to dehydrate the crust rather than soak it.

Sensory standard
Crust is blistered, crisp and attached. Beef is fork-tender without mushiness. Gravy is pepper-forward and fluid enough to nap without drowning the crust.
