Mechanism

Myofibrillar proteins tighten as they denature and water-holding capacity changes with temperature. Connective tissue in heavily worked cuts requires time and heat exposure for collagen to convert toward gelatin. That is why tenderloin and brisket cannot share one “done” number.

Sensory standard

Judge long-cooked cuts by probe resistance, slice behavior and moisture as well as temperature. A finished brisket flat should bend without crumbling and separate with a gentle bite.
