Mechanism

Hot oil transfers energy rapidly. Surface water flashes to steam and drives outward vapor flow while crust dehydrates. A fryer overloaded beyond its recovery capacity spends too long below its working range, extending cook time and producing pale, greasy food.

Sensory standard

Crust should be crisp and audibly brittle at first bite, properly browned and not slick with free oil. Oil aroma should be clean, never stale or paint-like.

Service execution

Log pre-drop temperature, low point, recovery time, cook time and quality. Useful fryer capacity is what can be cooked with predictable recovery, not basket volume.

Applied assessment

A basket takes oil from 365°F to 325°F and recovery is slow. What does that mean?

Model answer: The load is beyond the fryer’s preferred recovery envelope. Reduce or stagger the drop rather than compensating only with longer cooking.
