Control browning through moisture, temperature, time and chemistry rather than “high heat” alone.

Mechanism
Maillard chemistry involves amino compounds and reducing sugars and creates a large family of roasted aroma compounds. It differs from caramelization. Wet food stays near the boiling point of water at the surface until enough moisture evaporates, which is why crowding produces gray steaming instead of a crust.
Sensory standard
Target deep roasted and savory aromas without acrid bitterness. Color should be even enough to show broad contact while the interior retains the intended moisture.
