Read heat as a moving system, then connect temperature to structure and sensory evidence.

Mechanism
Conduction moves heat through contact; convection through moving fluid or air; radiation from hot surfaces or flame. Real cookery combines them. Food develops thermal gradients because the surface gains energy long before the center. Evaporation consumes energy and keeps wet surfaces cooler, so thickness, geometry, surface moisture and equipment recovery all change the heating curve.
A thermometer reports temperature where its sensor sits. It does not directly report collagen conversion, crust, moisture distribution or tenderness. Doneness is a combined physical and sensory state.
Sensory standard
Use sight, sound, touch and probe data together. Browning should smell roasted rather than burnt; fried food should emerge crisp rather than oil-slick; large cuts should be checked in more than one representative zone.

Service execution
Set maximum batch size by observed recovery, not by how much fits. Record starting temperature, lowest observed temperature, recovery time and finished quality.
Applied assessment
A cook gets beautiful browning but cold centers. Name two fixes that preserve crust.
Model answer: Reduce thickness or finish after searing with gentler convection, then verify the thickest point with a calibrated probe.
